Zucchini pizza crust!
Thanks to Jenna Fickes for this recipe!
Shred a zuchinni,
Add an egg (or grind up some flax and add water or just a drop of oil), and some oats (or other absorbent grain, corn, wheat, etc.).
Sprinkle in some spices (rosemary, salt, oregano, sage, onion – whatever you like).
Put it in a pan (we use a 12″ square that fits in our little convection oven), press it down flat and even.
Bake at 350 till edges are browning and zuc has dried quite a bit.
Now use it as a pizza crust – add garden favs (the last one we made we added freshly caught crab) and if you like cheese.
Bake again for about 10 min, or more depending on how much you like your veggies cooked.

This is a great idea for the eight or nine zucchini hiding in my fridge!
