Growing your own food locally makes it possible to get the freshest tasting and healthiest herbs, most of which are not even available in the grocery store (and if they are, they’re so expensive!) Examples are arugula, different kinds of mints, thymes, sages, savoury, lavender, types of basiland parsley … rosemary, fennel, dill, borage and bay grow so well here; you often have to be careful they don’t overtake your garden entirely! And some of these make great teas as well as being medicinal in their own ways. Dehydrating them is super-easy and fast as well.
Growing your own food is physical and mental therapy. Start small, using containers to grow some herbs… most can do pretty well with minimal supervision.
